Get Your Super Bowl On!!!

What’s better than football and food?? Hence my team was left in the dust and also left me in a pool of tears, I am still excited for some football!!! So whether you’re home celebrating with the family or headed out to the big party at a friend’s house. You can still eat well and enjoy your night. I’ve got the menu to let you cut loose, have fun, and not feel so guilty in the morning. Here’s your full menu from drinks to dessert.

Super Bowl Menu:

  • Moscow Mules
  • Baked Chicken wings with Cilantro Lime sauce
  • Turkey Burger Sliders with House Cole Slaw
  • Raw Chocolate Bark

Moscow Mules:

1 part of your favorite vodka and 1 part ginger beer. Add a squeeze of lime or a drop of doTerra Lime essential oil. Add a little ice an a sprig of rosemary and you have the perfect drink for the night. Be careful they go down fast and taste too good to put down!!

Baked Chicken Wings with Cilantro Lime Dressing:

Use fresh or frozen chicken wings and bake them on 350 degrees F until crispy and brown. About 20-25 minutes. Add to a bowl and coat with Cilantro Lime Dressing while there still warm. Dig in!!

Cilantro Lime Dressing:

  • 1/2 bunch fresh cilantro-de-stemmed and leaves minced
  • ¼ cup lime juice
  • ¼ cup local honey
  • 1 clove garlic-minced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Pinch cayenne
  • Pinch of sea salt 

In a food processor or blender, add cilantro, lime juice, honey, garlic, vinegar, cayenne, salt and pulse until blended. Turn on blender or food processor, slowly drizzle in olive oil until incorporated into the dressing. Store in a mason jar or other container.

Turkey Burger Sliders:

  • Package of ground turkey
  • 2 carrots-chopped
  • 1 celery stalk
  • 1/2 small onion- chopped
  • 1/2 Tablespoon Herbs de Provence
  • Pinch of sea salt
  • Pinch of ground pepper
  • Pinch Cayenne for heat
  • Slider rolls-preferably gluten-free
  • Handful of arugula

In a bowl, mix well ground turkey, carrots, celery, onions, salt, pepper, cayenne. Form small pattys and cook in the oven at 325 for 15-20 minutes until cooked through or in a saute pan for 15 minutes with a little olive oil. Once they are cooked. Place between 2 small buns- hard to find but see if you can get gluten-free rolls or ones made from a gluten-free flour. Add arugula on top of the burger and add condiments if you wish. Organic ketchup, whole grain mustard, cornichons, etc.

Homemade Cole Slaw:

  • small head green cabbage-shredded
  • small head purple cabbage-shredded
  • 2 carrots- shredded
  • 1 small purple onion-finely chopped
  • 1/4 cup sunflower seeds
  • 1/2 lemon squeezed or doTerra lemon essential oil
  • 1/4 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons whole grain mustard
  • Pinch sea salt
  • Pinch ground pepper

In a bowl, mix purple and green cabbage, carrots, onion, sunflower seeds. Top with oil, vinegar, salt, pepper, mustard, lemon, and mix until completely covered. Place in refrigerator for 30 minutes until cold and serve.

Chocolate Bark:

  • 1 cup coconut oil
  • 3 tablespoons agave nectar
  • ¾ cup cacao powder
  • ¼ cup almond butter
  • 1 cup almonds-coarsely chopped in a food processor by pulsing
  • 1 cup fire raisins
  • 1/3 cup sliced almonds
  • 1 cup Goji berries
  • 1/2 cup dried cherries
  • Pinch cayenne
  • Pinch Himalayan pink salt

Blend coconut oil, cacao powder, agave nectar, almond butter, salt, and cayenne until smooth. Transfer to a mixing bowl, add chopped almonds, Goji berries, raisins, cherries, and mix well. Spread the mixture on a sheet tray lined with parchment paper ½ – 1 inch thick. Top with sliced almonds. Put in freezer until solid. Break off and enjoy!

  1. The bark and the cole slaw particularly caught my eye, Kelly. I must admit I don’t personally care much about the big game, but I’m totally surrounded by people who do. LOL! So I’ll be a good sport. Have a wonderful day, my friend. I’m sitting here wondering if I have all the ingredients on-hand for that bark…I think I might! 🙂
